Preheat your oven to 425°F (220°C).
In a large bowl, combine flour, salt, and sugar.
Cut in the butter until the mixture resembles coarse crumbs.
Stir in ice water, one tablespoon at a time, until the dough forms a ball.
Divide the dough in half, shape into discs, and wrap in plastic wrap. Refrigerate for 4 hours or overnight.
Peel and slice apples, placing them in a large bowl.
Mix sugar, flour, cinnamon, nutmeg, and lemon juice with the apples. Toss to coat.
Roll out one dough disc on a floured surface and place it in a 9-inch pie pan.
Fill the crust with the apple mixture and dot with butter.
Roll out the second dough disc, place it over the filling, and cut slits for steam. Seal edges and sprinkle with sugar.
Bake for 15 minutes at 425°F, then reduce temperature to 350°F (175°C) and bake for an additional 30-35 minutes.
Allow pie to cool before serving.
