Ingredients

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter chilled and diced
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 6 to 8 tablespoons ice water
  • 6 to 8 apples Granny Smith and Honeycrisp recommended
  • ¾ cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoons lemon juice
  • 1 tablespoon butter

Instructions

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, combine flour, salt, and sugar.
  • Cut in the butter until the mixture resembles coarse crumbs.
  • Stir in ice water, one tablespoon at a time, until the dough forms a ball.
  • Divide the dough in half, shape into discs, and wrap in plastic wrap. Refrigerate for 4 hours or overnight.
  • Peel and slice apples, placing them in a large bowl.
  • Mix sugar, flour, cinnamon, nutmeg, and lemon juice with the apples. Toss to coat.
  • Roll out one dough disc on a floured surface and place it in a 9-inch pie pan.
  • Fill the crust with the apple mixture and dot with butter.
  • Roll out the second dough disc, place it over the filling, and cut slits for steam. Seal edges and sprinkle with sugar.
  • Bake for 15 minutes at 425°F, then reduce temperature to 350°F (175°C) and bake for an additional 30-35 minutes.
  • Allow pie to cool before serving.
