Ingredients

  • 1 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup butter softened
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sliced almonds for topping

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  • Add the egg and vanilla extract to the mixture, and beat until well combined.
  • In another bowl, whisk together the almond flour, all-purpose flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Fold in half of the sliced almonds into the dough.
  • Using a tablespoon, scoop out the dough and place it on a lined baking sheet.
  • Press the remaining sliced almonds on top of each cookie dough ball.
  • Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
